Menu Engineering — Common Questions

Yes — without item-level cost data, we can't calculate contribution margin, and the whole engagement loses its edge. We sign an NDA before you share anything sensitive. Recipe costs never leave our engagement and are deleted 90 days after handoff.

No. We're not culinary consultants. We work with your existing recipes, your existing kitchen, and your existing supplier. Our job is to restructure how those items show up in delivery: names, descriptions, bundles, modifiers, pricing, and what stays on the delivery menu vs dine-in only.

Each platform service includes basic menu work for that platform. Menu Engineering goes much deeper: full item-level margin analysis, profitability matrix classification, recipe-cost-informed bundle design, packaging review, and cross-platform deployment. If your delivery business is mature and your margin feels off, this is the higher-leverage service.

You don't have to. We give you the data and the recommendations; you decide. But we'll be direct: if you're not willing to kill any underperforming items, the ROI on this service drops significantly. Most of the margin lift comes from cutting "Dogs" (low margin, low travel quality) and reallocating attention to "Stars."

Sometimes — and sometimes the fix is just adding vent holes or separating sauces. We give you a packaging review with specific changes prioritized by impact and cost. We can recommend US suppliers if needed.
